But something shifted. Quietly, then all at once. And AABBCC, tucked into the first floor of Basant Lok Market in Vasant Vihar, is proof that Delhi nightlife has genuinely, irrevocably turned a corner.

If you know Lair, you know what you're getting into. The bar that put Delhi on Asia's cocktail map (literally — ranked 8th on Asia's 50 Best Bars this year) is back with something wilder. AABBCC is the brainchild of the same team and this time, they didn't just make a new bar. They built an experience.

The name? A nod to the alphabet of taste — the building blocks of learning, applied to what you drink. As team puts it, the whole idea is to "educate without being snobbish." No gatekeeping, no attitude. Just genuinely brilliant drinks and a space that wants you to enjoy yourself.

The Drinks: Okay, This is Why You're Here

The cocktail menu is divided into three chapters — Yesterday, Today, Tomorrow — and each drink comes with an ingredient breakdown, an illustration, and little stickers showing which part of your tongue is about to be hit. A cheat sheet for your taste buds. Genius.

Yesterday revisits the classics we all grew up drinking at house parties — Sex on the Beach, LIT, Bellini, Godfather — but sharper, smarter, more grown up. The Long Island comes with homemade almond liqueur, citrus, cherry cola, and ice that actually glows blue. Nostalgia with a plot twist.

Today is globally aware and locally rooted. The Ube Colada (rum, pineapple, coconut, ube, Malabar grass, masala tea, pandan water, topped with mango caviar) is a mini tropical vacation in one glass. The Te Quiero — tequila punch with pineapple, sweet pepper, mango, dill, and fennel cordial, served with a trio of flavoured salts to play with — is exactly the kind of drink you pass around the table. And the Consommé Paloma mixing tequila and Aperol with grapefruit, stone fruit, and consommé tonic hits with a proper umami punch that'll make you rethink everything you thought you knew about a Paloma.

Tomorrow is where it gets truly unhinged. Thai curry as a tequila cocktail (Where is My Rice). Gin channelling baingan ka bharta (Charred Aubergine — roasted eggplant cordial, bell pepper Patron, truffle muscovado, nigella, bharta mix, garnished with black ant specks). Toasted sushi rice-infused reposado tequila with smoked seaweed whisky and soy-wasabi caviar (Roll Me Up). These drinks follow a tasting-menu logic — Blueprints, Prototypes, Revelations — and honestly? They deliver.

Don't Skip the Food

The chicken liver pâté is luxuriously creamy with a hit of raspberry. The lamb birria tacos are smoky, slow-cooked, and deeply satisfying. The eggplant brûlée surprises you every time. And for dessert — yes, you should order dessert at a bar here — the Kaffeine (hazelnut mousse, boozy caramel, homemade vanilla gelato) and the AABBCC French Toast Sundae (berry compote, salted caramel, homemade Bailey's ice cream, feuilletine crunch) are both genuinely worth saving space for.

The Vibe, Honestly

For all its ambition, AABBCC doesn't take itself too seriously. It's heavy on concept, light on ego. Serious about craft, casual in attitude. The kind of bar that wants you to think, but mostly just wants you to have a really, really good time.
